Baked beans, cheese, coleslaw ...or caviar?

CAVIAR is not the first thing that comes to mind when most people think of baked potatoes, but a Leamington chef has paired the two as part of a national campaign to make us think again about the humble spud.

Simon Haigh, a Michelin-starred chef at the Mallory Court Hotel, is appearing in an advert for marketing group the Potato Council, in which he is shown making canapés of mini baked potatoes with caviar, sour cream and chive.

Mr Haigh, who received his first Michelin star in Scotland and has retained it for ten years while working in Warwickshire, is always looking for exciting combinations and has also come up with brandade (a mix of salt cod with olive oil) with violet potato crisps.

He said: “I was thrilled to be asked to feature in the latest ad from manyfacesofpotatoes.co.uk. Potatoes are such a versatile ingredient - they’re always on our restaurant’s menu and I’m forever encouraging my team of kitchen staff to experiment with them.”
